Celery Soup


I have loads of stories to share from my childhood and current drifts but in this post I want to concentrate on the food. S brought a bulk of celery from Costco and I determined to use all of it instead of letting in rot and then dump it. So I search the internet and came up with this recipe of Celery soup. I did not follow the exact directions but it still came out real yum.
I had some homemade chicken stock which I think made the soup even more delish.
My 19 month old had this soup for dinner and did not fuss till the last spoon. That spells tasty for me!!

So here is my version :
2Tbs Butter
Bunch of Spring Onions
2 garlic cloves minced
2 cups celery
1 cup Broccoli florets
diced Baby carrots
Salt to taste
Black pepper as much as you want
2 cups chicken stock.
1/2 cup Half n half

Relish
Celery leaves
salt and pepper
Spring Onions
Parmesan and cheddar medium cheese
Lemon Juice
bread on the side.


Method:

Heat 2 tbs butter and sauté the spring onion heads, potatoes, garlic.
Once the aroma floats up add a cup of diced celery, 4 small broccoli florets, 8-10 diced baby carrots. Sauté the veggies for a while until the colors brighten.
Now pour chicken stock and cover.
Let this boil for 15 min.
Put this into a mixie and grate and put it back in the boiling pan.
Add cream.
Bring to a boil for 3-5 min and You Are Done!!

Add some butter, Cheddar and parmesan if you want.
I did.

Add a sprig of celery leaf and lemon slices on top.
